Boilermaker Chili


  • 2 pounds ground beef chuck
  • 1 pound bulk Italian sausage
  • 3 (15 ounce) cans chili beans, drained
  • 1 (15 ounce) can chili beans in spicy sauce
  • 2 (28 ounce) cans diced tomatoes with juice
  • 1 (6 ounce) can tomato paste
  • 1 large yellow onion, chopped
  • 3 stalks celery, chopped
  • 1 green bell pepper, seeded and chopped
  • 1 red bell pepper, seeded and chopped
  • 2 green chile peppers, seeded and chopped
  • 1 tablespoon bacon bits
  • 4 cubes beef bouillon
  • 1/2 cup beer
  • 1/4 cup chili powder
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon minced garlic
  • 1 tablespoon dried oregano
  • 2 teaspoons ground cumin
  • 2 teaspoons hot pepper sauce (e.g. Tabasco™)
  • 1 teaspoon dried basil
  • 1 teaspoon salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon cayenne pepper
  • 1 teaspoon paprika
  • 1 teaspoon white sugar
  • 1 (10.5 ounce) bag corn chips such as Fritos®
  • 1 (8 ounce) package shredded Cheddar cheese

    Chicken Chorizo Hash

    The other night I made this recipe more for me and my four hour diet plan. However I was surprised to find that my partner loved it as well!!


    1/2 red onion diced
    1/2 of a bunch of cilantro chopped
    4 medium zucchini cut into 1/3 ” cubes
    1 red pepper cored, seeded, and chopped
    8 oz. Mexican Chorizo sausage
    2 C. cooked chicken shredded or chopped
    1 T. oil
    salt and black pepper to taste.

    Heat a large skillet over medium -high heat. Brown the crumbled chorizo for 2-3 minutes until browned. Add the chicken and heat until it is warmed through. Remove the meat and set it aside.

    Add the onions to the skillet and saute for 1 minute, add the zucchini and red pepper and an additional 1 T. of oil if needed. Saute for 2-3 minutes. The vegetables should be just cooked and NOT mushy.

    Salt and pepper and stir in the cilantro.  Serve pipping hot.

    Super easy!!!!

    Rosco’s Sports Grill and Bar

    Tonight we decided to try out Roaco’s Sports Grill and Bar located off of 4th and Frankford. We were quite surprised at how nice it was inside. There are flat screens hanging everywhere with a variety of sports being shown. The restaurant was extremely clean and even included a seating area with leather couches and a fireplace.

    As an appetizer we ordered the Stuffed Jalapeño Poppers which we have heard good things about. We received 6 perfectly cooked poppers with a side of ranch dipping sauce. These were excellent and we highly recommend them.


    For dinner we ordered the Green Chile Burger and a house salad with ranch. The salad was a typical house salad while the burger was thick and juicy. Unfortunately, the burger had to be sent back for further cooking as it was way undercooked. The staff was quick to address our concerns and rectify the issue. The burger was good and the Black Pepper Fries were great.



    All in all the food and service was good and we look forward to visiting again to try additional menu items.

    Mama Fu’s Serves Up Disappointment

    After hearing great things about Mama Fu’s on 82nd in Lubbock and the fact that they serve gluten free items we decided to give it a try. Unfortunately our experience was far from what we expected based on what others had told us.

    Although we were greeted in a pleasant manner and seated quickly our attention was quickly turned to the numerous dirty tables and soiled floor including a broom left unattended left resting against a table. After being seated we were immediately greeted by our server who was the highlight of the meal. She tended to all our needs, explained the menu, and provided a comforting setting.

    For dinner we ordered Chicken Lo Mein and Chicken Sesame Fried Rice. The food was disappointing in several fashions. First, the Chicken Sesame Fried Rice was bland and contained only a minimal amount of chicken. Second, the Lo Mein was bland as well and the Lo Mein noodles were soggy and over-cooked. Lastly, we both experienced stomach aches and discomfort shortly after consuming the meal.

    Due to the overall disappointment we do not plan to return in the near future and hope this is not common for the establishment. We will, however, give Mama Fu’s a second shot at some point. Perhaps after the new location opens at 19th and Quaker.

    Rain Uptown

    For date night we decided to go to Rain Uptown. It’s a kinda fancy pricey restaurant but they are sooo good it is worth it.

    We both drank water so sorry we don’t have any reviews for what is suppose to be awesome martinis…

    Started off with a side salad, crab cakes and bread. I think they always bring everyone bread and they also bring that olive oil dipping sauce similar to Carino’s. It was so good my cohort ate 4 baskets of bread. I had a salad to start and it wasn’t anything phenomenal… but was good… Then we got our crab cakes…. o m g they were excellent… If I could have I would have sent my whole order back and gotten like 6 of them!!

    For the main course the Man ordered Gnocchi Palmadore.. or something like that which is a potato pasta he really liked it. It came in a red meat sauce…. I first ordered the Lamb Chop but the waiter came back and said that it was all sold out so I had to order something else so I got the Beef Tenderloin with Lobster Champagne Sauce… AmAzInG!!! It came with potato medley and veggie duoir.. Which was basically like baked mixed potatoes and baked zucchini… I loved it all and even though I can’t eat as much as I used to I made myself eat everything since it was sooo good!! We were extremely impressed with out food.

    The restaurant was nice and cleaned and there weren’t any problems I normally see about trash on the floor or dusty stuff or anything like that. It really made me a little more at ease since everything looked good.

    The only thing I can say negative about anything is that our waiter kept telling us sorry for the wait. We really didn’t wait that long for anything especially since they had to figure out my order kinda late due to them running out of the first choice. I really didn’t notice it taking a long time or anything. I just felt like he apologized way too much but I guess that is better than him not saying anything at all. He did a great job filling up cups and bringing food and just the all around service. Super nice guy I just wish I remembered his name so I could tell everyone to get him!

    Overall great experience! Great service! great food! If it wasn’t a bit on the expensive side we would go way more often.. O and they don’t have a kids menu so we couldn’t probably go if we had the kiddo but that’s ok because it is more of an adult night / date night kinda place anyways.

    Ohana’s Again

    O My Gawd we love this place. We came again because the kiddo loves I mean really really loves what she calls the fire place. We walked in got seated and ordered almost as fast as you can say bob’s your uncle. Pretty concerned to the fact he dropped the spatula like 4 times during his little rounds.
